Make Your Own Cannabis-Infused Pumpkin Spiced Latte!
Medium/Intermediate
Ingredients:
Simple Syrup
- 3.5 – 7g dried cannabis (to your preference)
- 1/3 brown
- 2/3 white sugar
- 2 cups water
- For a PSL flair
- 1/8-1/4 teaspoon Clove
- 1/8-1/4 teaspoon Allspice
- 1/8-1/4 teaspoon Ginger
- 1/2 teaspoon Cinnamon
Cold Foam
- 2 tablespoon non-fat milk
- 6 tablespoon heavy cream
- ½ teaspoon vanilla extract
- 2 tablespoon sweetened condensed milk
- Pinch of salt
What you’ll need

- Saucepan

- Bowl
- Jar (mason jar works great)
- Cold brew coffee or espresso
- Ice
Method:
Decarboxylate your cannabis to activate the THC. There are many ways to decarb at home, ranging from easy enough to unbelievably easy—it’s all a matter of how much THC loss matters to you and how much time you want to devote to the process. We’ll use the baking sheet method for this recipe. Preheat your oven to 220 -240ºF/105-115ºC. Line a baking tray with parchment paper then evenly spread your roughly ground cannabis on top. Cover the tray with foil and tightly seal it. Bake in the preheated oven for 30-45 minutes. Give the tray a light shake half way through to help the cannabis decarb evenly.
Bring the water to a boil on low heat and add the sugar. Stir frequently until the sugar is fully dissolved in the water.
Once the sugar has dissolved, add your decarboxylated cannabis and let it gently boil for 10 minutes. Stir frequently and do not allow it to get too hot and over boil. Too high of a temperature can damage the THC and other cannabinoids.
After letting the mixture low boil for 10 minutes, lower the heat and add glucose syrup if desired. Let the mixture simmer for 6 to 7 minutes while regularly stirring. The mixture will now have started to thicken up into a syrup.
Take the hot syrup off the heat and allow to cool down. While it's cooling down, prepare a small strainer or cheese cloth which we will use to strain out the cannabis bits from the syrup.
Pour the warm syrup through your strainer or cheese cloth to remove the weed bits. When the cannabis infused simple syrup has cooled down, it is now ready to use. Try it out in your favorite canna-cocktail recipe or add it to any drink. Enjoy!
Store syrup in the fridge for best results.
In a medium sized mixing bowl or jar, pour in the non-fat milk, heavy cream, vanilla extract, and sweetened condensed milk. Using a whisk or electric whisk, whip the mixture until it has large bubbles, and then becomes thick and smooth.
Add a pinch of salt. Optionally, add more sugar or ¼ tsp pumpkin pie spice for extra fall flavor. Continue to whip until fully combined and the foam has thickened, just before it forms soft peaks.
Fill a cup with ice and pour in 8 ounces of cold brew or two shots of espresso. Add 1 tablespoon of simple syrup.
Hint: omit the ice and try it hot!
Carefully spoon or pour the cold foam over the cold brew or espresso.
Garnish with pumpkin pie spice and enjoy!
